Our Wines

Our wines are developed and aged in old barrels according to the traditional “criadera & solera” system, which forms the basis for all our sherries. The location of our bodegas, in Sanlucar de Barrameda as well as Jerez de la Frontera, has allowed us produce some of the oenological jewels of the winemaking world over the past two centuries, including “manzanilla” and “fino”, under the designations of origin "Manzanilla-Sanlúcar de Barrameda" and "Jerez-Xérès-Sherry".

These fortified white wines are currently produced with 100% “Palomino Fino” grapes as per the designations of origin. The Palomino Fino grape is carefully cultivated in the famous “albariza” white limestone soil, a result of the marine sedimentary formation that emerged through sea recess more than 5,000 years ago, giving these wines a delicate intensity that renders them extremely crisp and elegant.

These white wines produced from limestone soils are aged as “manzanilla” or “fino” exclusively in bodegas located within this unique zone. The “criadera & solera” system serves to create the nectar that is the end result formed through generations of harvests and production expertise.

Bodega conditions naturally bring about the development of “flor” yeasts that one by one take over all barrels designated for this type of maturation. The type, intensity, and longevity of the "flor", determines the unique maturation for "manzanilla and fino" that make them unique in terms of biologically matured wines.

MANZANILLA MARUJA

Manzanilla derived from the last “solera” of the original Manzanilla Maruja. A classic Sanlucar manzanilla with an average age of more than 8 years, and developed by means of local traditional methods. The production approach is very dynamic, with only small amounts extracted to promote the longevity of the “velo de flor”.
Grape: 100% Palomino Fino grown on “albariza” soil in Pago del Hornillo, Sanlucar de Barrameda.
Development and ageing: 8 barrel “criadera” system. Average age: 8-9 years.
“Sacas” (extractions): 8-10 times/year. Bodega: Sanlúcar de Barrameda, Calle Trasbolsa 35.
Tasting notes: Golden yellow colour, fresh and saline in style with hints of iodine and minerals with a long finish.

MANZANILLA JARONA

A young Manzanilla with considerable “flor” character. Aged in American oak barrels for over 3 years.

Grape: 100% Palomino Fino grown on “albariza” soil in Pago del Hornillo, Sanlucar de Barrameda.
Development and ageing: 3 barrel “criadera” system.
Average age: 3-4 years.
“Sacas”: 8-10 times/year.
Bodega: Sanlúcar de Bda, Calle Trasbolsa 35
Tasting notes: Straw coloured Manzanilla with a citrus and balsamic bouquet.

MANZANILLA PASADA

Very old Manzanilla, from the sacristy of the bodega. Manual “sacas” and “rocíos” (refills) using “jarra” (pitcher) and “canoa” (canoe).

Grape: 100% Palomino Fino grown on “albariza” soil in Pago del Hornillo, Sanlucar de Barrameda.
Development and ageing: 10 barrel “criadera” system.
Average age: 10-12 years.
“Sacas”: 2 times/year.
Bodega: Sanlúcar de Bda, C/ Trasbolsa, 35
Tasting notes: A golden yellow Manzanilla, with honey and “torrija” notes, high salinity and extremely long finish.

FINO CAMBORIO

Very old fino made in “almacenista” style, retaining the lateral "criadera & solera" system. Less dynamic than the manzanillas to retain the depth and power of the character encountered in old artisan finos.
Grape: 100% Palomino Fino grown on “albariza” soil in Pagos de Añina y Macharnudo in Jerez de la Frontera.
Development and aging: 3 barrel “criadera” system. Average age: 9-10 years.
“Sacas”: Once a year. Bodega: Jerez de la Frontera, Calle San Francisco Javier, 6-8.
Tasting notes: Golden in colour, very dry and intense with hints of almond and toast, with a very long finish.

AMONTILLADO

An amontillado from Sanlúcar derived from Manzanilla Pasada – the first phase of a 12 year biological maturation process, during which the “velo de flor” gives way to an oxidation stage over time.

Grape: Palomino Fino grown on “albariza” soil in Pago del Hornillo, Sanlucar de Barrameda.
Development and aging: 3 barrel “criadera” system.
“Sacas”: Once a year.
Bodega: Sanlúcar de Barrameda, Calle Trasbolsa, 35
Tasting notes: Amber coloured amontillado, very dry and intense with toasted almond notes and a hint of sea and smoke.

PALO CORTADO

A wine generated from selected barrels of the latest Manzanilla "criaderas". The first phase of biological ageing is very short, 1-2 years, followed by oxidation over time.

Grape: 100% Palomino Fino grown on “albariza” soil in Pago del Hornillo, Sanlucar de Barrameda.
Development and aging: 3 barrel “criadera” system.
“Sacas”: Once a year.
Bodega: Sanlucar de Barrameda, Calle Trasbolsa, 35.
Tasting notes: Amber coloured Palo Cortado, dry and delicate with toasted hazelnut, toffee and liquorice notes.

OLOROSO VIEJO

Old warehouse style oloroso with extreme subtlety and balance.

Grape: 100% Palomino Fino grown on “albariza” soil in Pagos de Añina y Macharnudo in Jerez de la Frontera.
Development and aging: 3 barrel “criadera” system.
Average age: 20 years.
“Sacas”: Once a year.
Bodega: Jerez de la Frontera, Calle San Francisco Javier, 6-8.
Tasting notes: Mahogany coloured Oloroso with pronounced spicy overtones of candied orange, and an extremely long finish.

CREAM

Cream sherry aged in American oak barrels through the “criadera & solera” system.

Grape: 75% Palomino Fino grape grown in Pago del Hornillo, Sanlucar de Barrameda and 25% Pedro Ximénez.
Development and aging: 3 barrel “criadera” system.
Average age: 12 years.
“Sacas”: 2 times/year.
Bodega: Sanlucar de Barrameda, Calle Trasbolsa, 35.
Tasting notes: Sweet and refreshing mahogany coloured Cream sherry, with hints of dried fruits and raisins.

MOSCATEL

Moscatel aged in American oak barrels through the “criadera & solera” system

Grape: 100% Moscatel.
Development and aging: 3 barrel “criadera” system.
Average age: 7 years.
“Sacas”: 2 times/year.
Bodega: Sanlucar de Barrameda, Calle Trasbolsa, 35.
Tasting notes: Very sweet, dark mahogany coloured Moscatel, with aromas of dried plums, raisins and white blossom.

PEDRO XIMÉNEZ

Pedro Ximénez aged in American oak barrels through the “criadera & solera” system.

Grape: 100% Pedro Ximénez.
Development and aging: 3 barrel “criadera” system.
Average age: 7 years.
“Sacas”: 2 times/year.
Bodega: Sanlucar de Barrameda, Calle Trasbolsa, 35.
Tasting notes: Very sweet, very dark mahogany coloured Pedro Ximénez with fig and dried peach aromas.
